The potato is standing up for itself. In light of the big news of the potato making us fat (see yesterday’s post), here is a nugget of a story to enlighten us even further.
Chris Voigt, executive director of Washington state’s Potato Commission, has the potato’s back. Mr. Voigt went on an all potato diet for 60 days. Nothing but the glorious tuber for breakfast, lunch and dinner. He ate all kinds, all colors and prepared them in a variety of ways. How did it all turn out? He lost 21 lbs., his glucose fell 10 points, his cholesterol fell 67 points and his triglycerides fell 60 points. He reports having more energy and sleeping better.
While this is a bit extreme, it does illustrate the notion that the potato in and of itself is not evil. Potato chips and french fries might be sinister but not the naked potato. Stand up and cheer!
