6-7 cups rolled oats
2 cups assorted nuts*
1/2 cup canola oil
1/2 cup honey
pinch Kosher salt
Preheat oven to 400 degrees.
Mix oats, nuts and salt together in large bowl. In separate bowl, add oil, then, using same measuring cup, add honey. See how the honey flows easily without sticking? Fancy that!
Add oil/honey mixture to oat mixture mixing well. Spread out on a half sheet pan lined with parchment paper. Bake for 17-20 minutes, stirring once. Let cool and enjoy!
Makes approximately 10-12 servings. Serving size: 1/2 cup.
Note: Measure portion size. And remember, no snacking! (even if you need a crunchy sweet hit). Go for an apple instead.
* (Sister uses a Trader Joe’s Dry Roasted & Salted Mixed Nuts (50% less salt). When she’s feeling sassy, she adds pepitas for a kick.
